عنوان انگلیسی Sterol and Squalene as Indicators of Adulteration of Milk Fat with Palm Oil and Its Fractions
چکیده انگلیسی مقاله Milk fat, being one of the expensive fatty matters among the edible fats is sometimes adultered with other fats particularly palm oils. The adulteration of milk fat with palm oil is a major issue for dairy industry particularly in Iran, therefore the aim of this study is to investigate the adulteration of milk fat by palm oils. According to the minor components present in unsaponifiable matter particularly sterols and squalene in the palm oil, palm olein and palm stearin might play a key role like fingerprinting in the contamination of impurities. Palm oils were added to milk fat at different concentrations and sterol and squalene was determined by the application of GC and HPLC respectively. The experimental data showed that palm oils are rich in sterol content so β-sitosterol occupies the highest amount therefore it could be a good indicator for detection of adulteration by palm oils at 5% and higher concentrations. The hydrocarbon Squalene, in comparison with their permitted contents, enables the identification of palm oils in milk fat. Squalene can be considered as a good indicator for palm oil adulterations. Adulteration of milkfat with palm origin up to 1% level has the possibility of detection by squalene profile.
