بررسی میزان نمک و سدیم موجود در فراوردههای غذایی فرایند شده ایرانی، ۹۲-۱۳۹۰
چکیده فارسی مقاله
دریافت: 1/2/94 پذیرش: 24/4/94 مقدمه: پر فشاری خون اولین عامل مرگ و میرهای قلبی- عروقی در ایران و جهان است. میزان نمک دریافتی در بزرگسالان ایرانی بیش از دو برابر میزان توصیه شده توسط سازمان جهانی بهداشت است. این مطالعه به منظور بررسی میزان نمک و سدیم موجود در فرآوردههای غذایی فرایند شده ایرانی انجام شد. روش کـار: این مطالعه مقطعی در شهر اصفهان طی سالهای 92-1390 انجام شد. از انواع مارکهای معتبر موجود در فروشگاههای شهر اصفهان به تعداد حداقل 5 نمونه از 94 نوع غذاهای فرایند شده تهیه، و میزان نمک و سدیم آنها اندازهگیری شد. به منظور مقایسه میانگین میزان نمک موجود در این مواد غذایی با میزان استاندارد، از اطلاعات شماره استاندارد ملی هر ماده غذایی استفاده شد. یافتهها: میانگین نمک و سدیم تمامی فراوردههای غذایی به ترتیب 10/1 ± 44/1 گرم درصد و 49/569 ± 74/792 میلیگرم در صد گرم بود. حدود 40% محصولات بیشتر از مقدار میانگین کل محصولات غذایی دارای نمک و سدیم بودند. 50% از محصولات جزء محصولات غذایی پرنمک (نمک مساوی و یا بیشتر از25/1 گرم در 100گرم ماده غذایی) و70% جزء محصولات غذایی پر سدیم (سدیم مساوی و یا بیشتر از500 میلیگرم سدیم در 100گرم ماده غذایی) بودند. نتیجهگیری: پنیر بالاترین میزان نمک و سدیم را در میان تمام غذاهای رایج مصرفی فرایند شده مورد آزمایش داشت. در تدوین و بازنگری استانداردهای ملی مواد غذایی باید به کاهش مقدار نمک و سدیم در مواد غذایی فرایند شده توجه شود. همچنین انجام تحقیقات در خصوص تولید محصولات کمنمک بدون افزایش مواد نگهدارنده، گام مثبتی در برنامه کاهش نمک است. گلواژگان: فشار خون، نمک، سدیم، غذاهای فرآیند شده

Salt intake amongst Iranian adults is more twice than world health organization recommended level. This study was conducted to assess salt and sodium level in Iranian processed foods. Methods: This cross-sectional study was conducted in Isfahan during 2011-2013.At least 5 samples of 94 items of processed food with different variety of valid brands were gathered from Isfahan shopping centers and their salt and sodium level were measured. The national standard number was used to compare the mean of salt and sodium of foods with standard level. Results: The mean of salt and sodium in all types of processed food were 1.44± 1.10 gr/100 and 792.74± 569.49 mg/100 gr. Of total number of food products 50% were salty foods (salt ≥ 1.25 gr/100) and 70% were high-sodium products (sodium≥500 mg/ 100 gr). Conclusion: Cheese had the highest level of salt and sodium among all processed foods. The policy of Salt and sodium reduction in processed foods should be taken into account in national food standard formulation and reformulation. Conducting further research to produce low salt products with no added preservative is an effective strategy in salt reduction program.
